They only have one tapered cutting edge but you can turn them and use them on the opposite stalk roll. If the leading edge of the knife is rounded and the hardened edge is gone, you might as well get new ones because it will not be very agressive with that much wear. Also, if you have excessive wear one the former leading edge that is now to the rear of the stalk roll, it might leave some trash at the back of the stalk roll. This tends to hang up the ears as the gathering chains try to clear them out. If you are in damp conditions it really slows things up.
