N5 wheat settings

I have miss placed my manual for N5. I have never ran wheat before. What settings would be a good start for soft red winter wheat, should average about 50 bu. running a 16 ft flex head.

Ps do i need to install the cover plates on cage? I am wanting to bale the straw.
